Light and fluffy plant-based pancakes, topped with warm mixed red fruit infused with SAPINCA Organic Root Elixir
Ingredients:
- 30 ML SAPINCA Organic Root Elixir
- 250 GR mixed red fruit
- 180 GR all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons maple syrup
- 230 ML plantbased milk
- 110 ML water
- 2 tablespoons rapeseed oil
- 4 tablespoons of coconut yoghurt
Method:
- In a small saucepan mixed red fruit and 30ML of SAPINCA Organic Root Elixir, on low heat. Once warm, set aside.
- In a large bowl, whisk flour, baking powder, and salt.
- Pour milk, maple syrup, water and oil into the bowl with dry ingredients, and stir with large spoon until just combined. Don't over mix to maintain fluffiness.
- Heat a large pan over medium heat. Grease pan and pour desired amount of batter onto it. Bake until bubbles form, flip and bake until golden brown, about 1-2 minutes. Repeat with all the remaining batter.
- Place the warm fruit on top of pancakes.
- Add one spoon of coconut yoghurt on top.
- Finish it off with a drizzle of SAPINCA.
