SAPINCA - Fluffy Red Fruit Pancakes

⁠Light and fluffy plant-based pancakes, topped with warm mixed red fruit infused with SAPINCA Organic Root Elixir


Ingredients:

  • 30 ML SAPINCA⁠ Organic Root Elixir
  • 250 GR mixed red fruit⁠
  • 180 GR all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons maple syrup
  • 230 ML plantbased milk
  • 110 ML water
  • 2 tablespoons rapeseed oil
  • 4 tablespoons of coconut yoghurt⁠

Method:
  1. In a small saucepan⁠ mixed red fruit and 30ML of SAPINCA Organic Root Elixir, on low heat. Once warm, set aside.
  2. In a large bowl, whisk flour, baking powder, and salt.
  3. Pour milk, maple syrup, water and oil into the bowl with dry ingredients, and stir with large spoon until just combined. Don't over mix to maintain fluffiness.
  4. Heat a large pan over medium heat. Grease pan and pour desired amount of batter onto it. Bake until bubbles form, flip and bake until golden brown, about 1-2 minutes. Repeat with all the remaining batter.
  5. Place the warm fruit on top of pancake⁠s.
  6. Add one spoon of coconut yoghurt on top⁠.
  7. Finish it off with a drizzle of SAPINCA⁠.
